- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 1/2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 2 large eggs, room temperature
- 3/4 cup granulated sugar
- 1/2 cup vegetable oil
- 1/4 cup unsweetened applesauce
- 1 teaspoon pure vanilla extract
- 2 cups finely grated carrots (about 3 medium carrots)
- Cream Cheese Frosting:
- 6 oz cream cheese, softened
- 1 1/2 cups powdered sugar, sifted
- 2 tablespoons unsalted butter, softened
- 1/2 teaspoon pure vanilla extract
- 1–2 tablespoons milk, as needed for consistency
Instructions
- Preheat and prepare. Heat your oven to 350°F. Grease a 9x5-inch loaf pan and line it with parchment paper, leaving an overhang on both long sides so you can lift the loaf out cleanly.
- Mix the dry ingredients. In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Set aside.
- Combine the wet ingredients. In a large bowl, beat the eggs and sugar together until lightened, about 2 minutes. Whisk in the oil, applesauce, and vanilla until smooth and well combined.
- Fold in carrots and flour. Stir the grated carrots into the wet mixture. Add the dry ingredients and fold gently with a spatula until just combined — do not overmix or the crumb will tighten.

- Frost and serve. Spread the cream cheese frosting generously over the cooled loaf. Use an offset spatula or the back of a spoon to smooth it — or swirl it, if that’s how your hands feel. Slice and share.
