Carrot Cake Cupcakes With Vanilla Cream Cheese Frosting

Ingredients
- 1 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon fine salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 2 large eggs, room temperature
- 3/4 cup granulated sugar
- 1/2 cup neutral oil (such as canola or vegetable)
- 1/4 cup sour cream
- 1 teaspoon pure vanilla extract
- 1 1/2 cups finely grated carrots (about 3 medium carrots)
- Vanilla Cream Cheese Frosting:
- 8 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar, sifted
- 1 teaspoon pure vanilla extract
- Pinch of salt
Instructions
- Preheat and prep. Preheat oven to 350°F. Line a standard 12-cup muffin tin with paper liners and set aside.
- Mix dry ingredients. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger until evenly combined.
- Mix wet ingredients. In a large bowl, whisk eggs and granulated sugar together until slightly thickened, about 1 minute. Whisk in oil, sour cream, and vanilla extract until smooth.
- Combine and fold. Add the dry ingredients to the wet ingredients and stir until just combined — do not overmix. Fold in the grated carrots with a spatula until evenly distributed.
- Fill and bake. Divide batter evenly among the prepared liners, filling each about 3/4 full. Bake for 20–22 minutes, until a toothpick inserted in the center comes out clean and the tops spring back lightly when touched.
- Cool completely. Let cupcakes cool in the pan for 5 minutes, then transfer to a wire rack and cool completely before frosting. Do not frost warm cupcakes.
- Make the frosting. Beat cream cheese and butter together with a hand mixer or stand mixer on medium speed until smooth and fluffy, about 2 minutes. Add powdered sugar, vanilla, and salt; beat on low until incorporated, then increase to medium-high and beat for 1 minute until light and creamy.
- Frost and serve. Pipe or spread frosting generously onto cooled cupcakes. Store leftovers in an airtight container in the refrigerator for up to 3 days; bring to room temperature before serving.
