Buttery Soft Pretzel Bites

Ingredients
- 1 1/2 cups warm water (110°F)
- 2 1/4 teaspoons active dry yeast (1 packet)
- 1 teaspoon granulated sugar
- 4 1/2 cups all-purpose flour, plus more for dusting
- 2 teaspoons kosher salt
- 4 tablespoons unsalted butter, melted, divided
- 10 cups water (for baking soda bath)
- 2/3 cup baking soda
- 1 large egg, beaten (for egg wash)
- Coarse sea salt or pretzel salt, for topping
- 2 tablespoons unsalted butter, melted (for finishing)
Instructions
- Activate the yeast. Combine warm water, yeast, and sugar in a large bowl. Let sit 5 minutes until foamy and fragrant.
- Make the dough. Add flour, kosher salt, and 2 tablespoons of the melted butter to the yeast mixture. Stir until a shaggy dough forms, then turn out onto a lightly floured surface and knead for 8–10 minutes until smooth and elastic. The dough should spring back when poked.
- Let it rise. Place dough in a lightly oiled bowl, cover with a clean kitchen towel, and let rise in a warm spot for 1 hour or until doubled in size.
- Preheat and prep. Preheat oven to 425°F. Line two baking sheets with parchment and lightly grease. Bring 10 cups of water to a boil in a large pot, then carefully add baking soda — it will foam up.
- Shape the bites. Punch down the risen dough and divide into 8 equal portions. Roll each portion into a long rope about 3/4 inch thick. Cut each rope into 1 1/2-inch pieces.
- Baking soda bath. Working in batches, drop pretzel bites into the boiling baking soda water for 30 seconds. Remove with a slotted spoon and place on prepared baking sheets, spacing them about 1 inch apart.
- Egg wash and salt. Brush each bite with beaten egg and sprinkle generously with coarse salt.
- Bake. Bake at 425°F for 12–15 minutes until deep golden brown. Rotate pans halfway through for even color.
- Finish with butter. As soon as the bites come out of the oven, brush them immediately with the remaining 2 tablespoons melted butter. Serve warm.
