Butter Board —rsquo; Sunday Slowdown at the Table

Sunday: pot roast.

The pot roast had been going since morning, doing its slow, steady work—and that felt like enough. While it finished, I wanted something to put on the table that matched the mood of the day: unhurried, generous, no fuss. A butter board is exactly that. You spread, you scatter, you set out the bread, and you let people come to it in their own time—which is just what we needed after a week of driving and waiting and watching Josie head back out to the track.

Butter Board

Ingredients

  • 1 cup (2 sticks) unsalted butter, softened to room temperature
  • 2 tablespoons honey
  • 1/4 teaspoon flaky sea salt, plus more to taste
  • 2 tablespoons fresh herbs (rosemary, thyme, or chives), finely chopped
  • 1/4 cup mixed nuts (walnuts or pistachios), roughly chopped
  • Zest of 1 lemon
  • Pinch of red pepper flakes
  • 1 sliced baguette or loaf of crusty bread, for serving

Instructions

  1. Soften the butter. Set the butter out at room temperature 45–60 minutes before you plan to serve. It should be very soft and easy to spread—not melted, but yielding.
  2. Spread. Using a butter knife or offset spatula, spread the softened butter directly onto a wooden board or large serving plate in a thick, swooping layer with plenty of texture and ridges to catch the toppings.
  3. Add toppings. Drizzle honey over the surface, then scatter the fresh herbs, chopped nuts, lemon zest, flaky sea salt, and red pepper flakes evenly across the butter.
  4. Arrange the bread. Fan sliced baguette or torn crusty bread around the edges of the board. Set out small spreaders or let people use the bread itself to drag through the butter.
  5. Serve. Bring to the table right away. If making ahead, cover and refrigerate for up to 2 days—bring back to room temperature for at least 30 minutes before serving.
