The Red Sox are playing well and Sean has resumed his season-long ritual of following the box scores and subjecting me to their implications at dinner. I've been a Sox fan my whole life in the Southie way—the kind where you love them and expect them to break your heart and are occasionally surprised when they don't—and Sean follows them with the methodical attention of someone who has a system and trusts the system and checks the system every morning. Liam has begun to associate the TV playing baseball with Dad being happy, which is accurate data he's correctly interpreting.
We took Liam to the Esplanade on Sunday and he walked the path for forty-five minutes with the absolute authority of a toddler who has discovered that the world is paved and goes on forever in both directions. He stopped to look at the ducks on the river, which involved a full stop, both hands on the railing, serious facial expression. He watched them for three minutes. Then he said "duck" and moved on. Assessment complete. He is acquiring the world duck by duck and tree by tree and it is the best project I have ever watched in progress.
I made a risotto with spring peas and lemon on Saturday, the kind that takes forty minutes of stirring and requires your full attention, which is the kind of cooking I find meditative. Sean knows when I'm making risotto because I put on music and face the stove and don't want to talk, and he keeps Liam in the other room and brings me a glass of wine at the twenty-minute mark without being asked. We've been together thirteen years. He knows the risotto ritual. This is a form of love.
The risotto is a Saturday thing — it needs the time and the ritual and Sean keeping Liam out of the kitchen while I stir. But the lemon, the brightness, that particular combination of rich and sharp that makes the whole pot feel like a reward for paying attention — I wanted that on a Tuesday too. Brown butter lemon pasta gets you there in thirty minutes, no standing at the stove, no ceremony required. It doesn’t replace the risotto. Nothing replaces the risotto. But it carries the same spirit, and sometimes that’s exactly what a weeknight calls for.
Brown Butter Lemon Pasta
Prep Time: 10 min | Cook Time: 20 min | Total Time: 30 min | Servings: 4
Ingredients
- 12 oz spaghetti or linguine
- 6 tbsp unsalted butter
- 4 cloves garlic, thinly sliced
- Zest of 2 lemons
- 3 tbsp fresh lemon juice (about 1 1/2 lemons)
- 3/4 cup reserved pasta water
- 1/2 cup freshly grated Parmesan cheese, plus more for serving
- 1/4 tsp crushed red pepper flakes (optional)
- Kosher salt and freshly cracked black pepper to taste
- 2 tbsp chopped fresh flat-leaf parsley
Instructions
- Cook the pasta. Bring a large pot of well-salted water to a boil. Cook pasta according to package directions until al dente. Before draining, scoop out at least 3/4 cup of pasta water and set aside. Drain the pasta and set aside.
- Brown the butter. In a large skillet over medium heat, melt the butter. Continue cooking, swirling the pan occasionally, until the butter turns golden and smells nutty — about 4 to 5 minutes. Watch it carefully; it goes from golden to burnt quickly.
- Add garlic and lemon zest. Add the sliced garlic and lemon zest to the browned butter. Cook, stirring, for 1 to 2 minutes until the garlic is fragrant and just barely golden at the edges. Remove from heat and add the red pepper flakes if using.
- Build the sauce. Return the pan to low heat. Add the lemon juice and 1/2 cup of the reserved pasta water, stirring to combine. Let it simmer for 1 minute until slightly reduced.
- Toss the pasta. Add the drained pasta to the skillet and toss well to coat, adding more pasta water a splash at a time if the sauce seems tight. The starchy water helps the sauce cling to every strand.
- Finish and serve. Remove from heat and stir in the Parmesan until melted and glossy. Season generously with salt and black pepper. Divide among bowls, top with parsley and extra Parmesan, and serve immediately.
