End of August. Last peaches of summer. Mama's cobbler, as always — the annual farewell to the season, baked in a dish that has seen thirty years of cobblers, the butter and sugar and peach juice soaked into the ceramic like memories soaked into a house. I ate it on the porch in the late August evening, the sky fading from blue to pink to the gray that promises fall, and the cobbler was sweet and the evening was warm and the summer was ending and I let it go, the way I'm learning to let things go: slowly, with appreciation, with the understanding that endings are not losses, they're completions.
One more summer on the route. One more August of frozen water bottles and heat so thick you could chew it. One more season of sweat and endurance and the particular satisfaction of doing a hard thing well. Then it's done, and the done-ness will be either grief or relief, and probably both, and I'll eat cobbler on the porch and watch the sky and the done-ness will settle into something I can name, and the name will probably be "peace," and peace is what I've been walking toward for thirty-seven years, one letter at a time.
Mama’s peach cobbler belongs to her, to that dish, to thirty summers of ritual — I wouldn’t try to replicate it and call it mine. But that evening on the porch, watching summer tip into fall, I wanted something in that same spirit: warm fruit under heat, a little sugar pulling out what the season had left to give. Pears are what August hands you on its way out the door, and broiling them — quick, honest, no fuss — felt right for a man who’s learning that completions don’t need to be complicated. This is the dessert I made when I got home that night, and it tasted like exactly what it was: the end of something good.
Broiled Pear Dessert
Prep Time: 5 minutes | Cook Time: 10 minutes | Total Time: 15 minutes | Servings: 4
Ingredients
- 4 ripe but firm pears, halved lengthwise and cored
- 2 tablespoons unsalted butter, melted
- 3 tablespoons brown sugar, packed
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon salt
- Vanilla ice cream or whipped cream, for serving
Instructions
- Preheat broiler. Set your oven broiler to high and position a rack about 4 inches from the heat source. Line a rimmed baking sheet with foil.
- Prepare the pears. Arrange the pear halves cut-side up on the prepared baking sheet. Brush each half generously with melted butter, making sure to coat the cut surface fully.
- Add the topping. In a small bowl, stir together the brown sugar, cinnamon, nutmeg, and salt. Spoon the mixture evenly over each pear half, pressing it lightly so it adheres.
- Broil. Slide the baking sheet under the broiler and cook for 7—10 minutes, watching closely, until the sugar is bubbling and caramelized and the pears are tender when pierced with a fork. The edges should show a little char — that’s the sweetness concentrating.
- Serve warm. Transfer pears to serving plates and top each with a scoop of vanilla ice cream or a dollop of whipped cream. Drizzle any caramel syrup from the pan over the top.
