The market continues its steady climb. I had 5 showings this week and 1 offers. My reputation precedes me now — the Greek agent who tells the truth about roofs and brings food to open houses. Worse reputations exist.
Mama called at 9 PM to tell me she sold out of baklava. She reported this with the urgency of a woman who considers every piece of information critical and every phone call an opportunity to also critique my cooking from forty miles away.
Mama is 81 and still at the bakery at 4 AM. I do not know how much longer she will do this. I do not ask. You do not ask Voula Papadopoulos about endings. You stand next to her and roll phyllo and trust that the beginning continues as long as the hands are moving.
I grilled souvlaki tonight — chicken marinated in lemon, garlic, and oregano, served in warm pita with tzatziki. Fast, perfect, summer in a wrap. I ate it on the back porch while the sun set and the air smelled like oregano and summer. A quiet evening. The food was good. Good is enough. Good is everything.
I visited the bakery this weekend. Mama was behind the counter, flour on her apron, her face set in the concentration of a woman who takes baking as seriously as other people take surgery. I stood next to her and rolled dough and said nothing because the silence between us is not empty — it is full of every recipe she taught me and every critique she gave me and every morning she woke at 4 AM to make phyllo that nobody else can make.
I have been grilling things on skewers my whole life — Mama taught me that threading food onto a stick is an act of intention, of putting the meal in order before the heat does its work. These Breakfast Skewers are not souvlaki, but they carry the same spirit: simple, assembled with care, cooked over direct heat until everything is exactly what it is supposed to be. After a week of showings and a 9 PM phone call about baklava, I did not want complicated. I wanted something I could hold in my hand on the back porch while the sun finished setting and the oregano smell drifted over from the neighbor’s garden. This was that thing.
Breakfast Skewers
Prep Time: 15 min | Cook Time: 12 min | Total Time: 27 min | Servings: 4
Ingredients
- 8 oz breakfast sausage links, cut into 1-inch pieces
- 8 strips thick-cut bacon, cut into 1-inch pieces
- 1 cup baby potatoes, halved and parboiled until just tender
- 1 red bell pepper, cut into 1-inch chunks
- 1 green bell pepper, cut into 1-inch chunks
- 1 small yellow onion, cut into wedges
- 8 oz button mushrooms, cleaned and stems trimmed
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- Salt and black pepper to taste
- 8 wooden or metal skewers (if wooden, soak 30 min in water)
Instructions
- Prep the grill. Preheat grill or grill pan to medium-high heat. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- Season the ingredients. In a large bowl, combine the sausage pieces, bacon, parboiled potatoes, bell peppers, onion wedges, and mushrooms. Drizzle with olive oil and sprinkle with garlic powder, smoked paprika, oregano, salt, and pepper. Toss until everything is evenly coated.
- Assemble the skewers. Thread the sausage, bacon, vegetables, and potatoes onto the skewers in alternating order, distributing evenly across all 8 skewers.
- Grill the skewers. Place skewers on the preheated grill. Cook for 10—12 minutes, turning every 3—4 minutes, until the sausage is cooked through, the bacon is lightly crisped at the edges, and the vegetables are tender with visible char marks.
- Rest and serve. Remove from heat and let rest for 2 minutes. Serve directly on the skewers alongside eggs, toast, or simply on their own with a dipping sauce of your choice.
