Breaded Turkey Breasts

Ingredients

  • 4 boneless, skinless turkey breast cutlets (about 6 oz each)
  • 1 cup seasoned breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 2 tablespoons milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons vegetable oil

Instructions

  1. Prep the cutlets. Pat the turkey breast cutlets dry with paper towels. If any are thicker than 3/4 inch, place them between plastic wrap and pound gently to an even thickness for consistent cooking.
  2. Set up your dredging station. Place flour in a shallow dish. In a second shallow dish, whisk together eggs and milk. In a third dish, combine breadcrumbs, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  3. Bread the turkey. Working one cutlet at a time, dredge in flour and shake off the excess. Dip into the egg mixture, letting any excess drip off. Press firmly into the seasoned breadcrumbs, coating both sides evenly.
  4. Pan-fry. Heat vegetable oil in a large skillet over medium heat. Once the oil shimmers, add the breaded cutlets in a single layer — do not crowd the pan. Cook for 5–6 minutes per side, or until the breading is deep golden brown and the internal temperature reaches 165°F.
  5. Rest and serve. Transfer cooked cutlets to a wire rack or paper-towel-lined plate and let rest for 3–5 minutes before serving. Serve alongside your favorite sides — greens, mac and cheese, or cornbread all fit beautifully.
