Brats in Beer is the kind of meal that asks nothing of you except to show up hungry, and it delivers the same grounded, no-fuss comfort that I felt the moment I walked through that door. Brats in Beer

Ingredients

  • 6 bratwurst sausages
  • 1 can (12 oz) lager or pilsner beer
  • 1 large yellow onion, thinly sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon brown sugar
  • 1 teaspoon caraway seeds (optional)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 6 bratwurst or hoagie buns
  • Spicy brown mustard, for serving

Instructions

  1. Simmer the brats. Place bratwurst in a large saucepan or deep skillet. Pour in the beer and add sliced onions. Bring to a boil over medium-high heat, then reduce to a simmer. Cook uncovered for 15–20 minutes, turning brats halfway through, until cooked through.
  2. Brown the brats. Remove brats from the liquid and set aside. In a separate skillet, melt butter over medium-high heat. Add the brats and sear 2–3 minutes per side until a deep golden crust forms. Remove and keep warm.
  3. Caramelize the onions. Transfer the simmered onions to the skillet with the remaining butter. Sprinkle with brown sugar, caraway seeds, salt, and pepper. Cook over medium heat, stirring occasionally, for 8–10 minutes until soft and golden brown.
  4. Assemble and serve. Nestle each brat into a bun and top generously with the caramelized onions. Serve immediately with spicy brown mustard on the side.
