That Sunday dinner — Mama’s smothered pork chops, the gravy just right, every seat filled — was the meal I keep returning to in my mind, the one I was already mourning while I was still sitting at the table. When I cook now, I reach for the slow cooker more than I used to, because there’s something honest about a dish that asks you to be patient, that won’t be rushed, that fills the whole house with a smell that says stay. This crockpot meatloaf isn’t Mama’s pork chops, but it carries the same spirit — low and slow, built for a full table, the kind of meal you set down in front of people you love and hope they remember.
The Best Crockpot Meatloaf
Prep Time: 15 min | Cook Time: 4 hrs | Total Time: 4 hrs 15 min | Servings: 6
Ingredients
- 2 lbs ground beef (80/20 blend)
- 1/2 cup plain breadcrumbs
- 1/3 cup whole milk
- 2 large eggs, beaten
- 1/2 medium yellow onion, finely diced
- 2 cloves garlic, minced
- 2 tablespoons Worcestershire sauce
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon dried thyme
- For the glaze:
- 1/2 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon apple cider vinegar
- 1 teaspoon yellow mustard
Instructions
- Prepare the slow cooker. Line the bottom of a 6-quart slow cooker with a piece of aluminum foil shaped into a shallow tray or use a slow cooker liner for easier cleanup.
- Mix the meatloaf. In a large bowl, combine the ground beef, breadcrumbs, milk, eggs, onion, garlic, Worcestershire sauce, salt, pepper, paprika, and thyme. Mix gently with your hands just until combined — do not overwork the meat or it will become dense.
- Form and place. Shape the mixture into a loaf roughly 4 inches wide and transfer it to the prepared slow cooker. It should sit free of the sides so heat can circulate evenly.
- Make the glaze. In a small bowl, whisk together the ketchup, brown sugar, apple cider vinegar, and mustard until smooth. Spread half the glaze evenly over the top and sides of the meatloaf.
- Cook low and slow. Cover and cook on LOW for 3 1/2 to 4 hours, or until an instant-read thermometer inserted into the center reads 160°F. Avoid lifting the lid during cooking.
- Glaze and rest. In the last 20 minutes of cooking, spread the remaining glaze over the meatloaf, replace the lid, and finish cooking. When done, turn off the heat and let the meatloaf rest in the slow cooker for 10 minutes before slicing — this keeps it from falling apart.
- Slice and serve. Carefully lift the meatloaf out using the foil tray, transfer to a cutting board, and slice into 1-inch portions. Serve with mashed potatoes, green beans, or whatever brings the people you love to the table.
