The ISFA work continues — another kitchen table this week, another young family with numbers that might work. I sat across from a couple in Madison County and laid out the grants and watched their faces change from fear to possibility, and the change is the thing I live for now.
The recipe this week: grilled chicken with garden vegetables. Standing at the stove, Marlene's wooden spoon in my hand (the cracked one, the one that will outlast us all), the recipe either from the card box or from my own expanding collection, both equally real, both equally mine. The kitchen holds all of it — the old recipes and the new ones, the teacher's food and the student's food, the grief and the joy and the cinnamon. All of it. Always.
Canning approaches. August. The ritual that marks the turn from growing to preserving, from garden to pantry, from the sun to the jar. The pressure canner — Marlene's mother's, weight jiggly, gauge lying, handle replaced twice — waiting in the closet like a veteran reporting for duty. The heirloom equipment for the heirloom work.
With the canner waiting in the closet and the garden practically shouting at me to keep up, I needed something that honored all those vegetables without keeping me at the stove all evening. This beet salad has become my go-to on nights when the kitchen table has already done double duty—grant paperwork in the afternoon, dinner by seven. It’s the kind of recipe that feels like it belongs in both the card box and my own collection: simple, nourishing, and exactly enough.
Beet Salad
Prep Time: 15 minutes | Cook Time: 45 minutes | Total Time: 1 hour | Servings: 4
Ingredients
- 4 medium beets, trimmed and scrubbed
- 2 tablespoons olive oil, divided
- 5 cups mixed greens (arugula and spinach work well)
- 1/3 cup crumbled goat cheese
- 1/4 cup chopped walnuts, toasted
- 1/4 cup thinly sliced red onion
- 2 tablespoons balsamic vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- Salt and freshly ground black pepper, to taste
Instructions
- Roast the beets. Preheat oven to 400°F. Wrap each beet individually in aluminum foil and place on a baking sheet. Roast for 40–45 minutes, until tender when pierced with a knife. Let cool until easy to handle.
- Peel and slice. Once cooled, peel the beets by rubbing the skins off with a paper towel. Cut into 1/2-inch wedges or cubes.
- Make the dressing. In a small bowl, whisk together balsamic vinegar, Dijon mustard, honey, and 1 tablespoon olive oil. Season with salt and pepper.
- Toast the walnuts. Heat a dry skillet over medium heat. Add walnuts and toast for 3–4 minutes, stirring frequently, until fragrant. Remove from heat.
- Assemble the salad. Arrange mixed greens on a serving platter or individual plates. Top with roasted beets, red onion, toasted walnuts, and crumbled goat cheese.
- Dress and serve. Drizzle the balsamic dressing over the salad. Serve immediately.
