Marcus's first varsity debate tournament. He argued immigration policy and he was magnificent — poised, prepared, passionate in the controlled way that debate requires, the fire banked but visible. He didn't win (second place, which he treated as a personal affront), but his coach said, "First freshman to make finals in six years." Marcus said, "Next time I'll make first." The confidence. The certainty. Mama's certainty, Curtis's steadiness, my stubbornness — all of it concentrated in a fourteen-year-old boy at a podium.
Derek came. He comes to every tournament now. Back row. Quiet. Present. He doesn't cheer (that would mortify Marcus). He just sits. And afterward, in the car, he says something specific — not "great job" but "your rebuttal on the third point was sharp." Specific. Observant. The praise of a man who pays attention, which is the only praise that matters to a boy who has been noticed by one parent and ignored by the other his whole life.
Made victory-adjacent chicken — fried chicken for second place, because second place still gets Mama's recipe in this house. Marcus ate three pieces and plotted his next tournament between bites. The debate never stops at this table. The arguments continue through dinner. The chicken disappears. The boy grows. The line holds.
I didn’t make fried chicken because Marcus won — I made it because second place at a varsity tournament as a freshman deserves something that takes effort, something that smells like celebration the moment it hits the pan. These basil mint chicken thighs were what I had in mind: bright and bold and a little unexpected, just like that kid standing at a podium arguing immigration policy like he’d been doing it for years. Derek called the rebuttal sharp. I called the chicken done. Both of us were right.
Basil Mint Chicken Thighs
Prep Time: 15 min | Cook Time: 25 min | Total Time: 40 min | Servings: 4
Ingredients
- 8 bone-in, skin-on chicken thighs (about 3 lbs)
- 1/2 cup fresh basil leaves, packed
- 1/4 cup fresh mint leaves, packed
- 3 cloves garlic, minced
- 3 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
Instructions
- Make the herb marinade. Combine basil, mint, garlic, olive oil, lemon juice, lemon zest, salt, pepper, and red pepper flakes in a food processor or blender. Pulse until a loose paste forms.
- Marinate the chicken. Pat chicken thighs dry with paper towels. Rub the herb paste generously over and under the skin of each thigh. Place in a zip-top bag or covered dish and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.
- Preheat your oven. Heat oven to 425°F. Line a rimmed baking sheet with foil and set a wire rack on top, or use a cast-iron skillet.
- Sear the chicken. Heat a large oven-safe skillet over medium-high heat with a drizzle of oil. Place chicken thighs skin-side down and sear for 4–5 minutes until the skin is golden and releases easily from the pan.
- Finish in the oven. Flip thighs skin-side up and transfer the skillet to the preheated oven. Roast for 18–22 minutes, until the internal temperature reaches 165°F and the skin is crisp and deep golden brown.
- Rest and serve. Let the chicken rest 5 minutes before serving. Garnish with a few fresh basil or mint leaves if desired. Serve alongside rice, roasted vegetables, or whatever the table calls for.
