- 4 lbs beef back ribs (2 racks), membrane removed
- 2 tablespoons brown sugar
- 1 tablespoon smoked paprika
- 1 tablespoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon ground cumin
- 1 cup barbecue sauce (your preferred brand or homemade)
- 2 tablespoons apple cider vinegar
- 1 tablespoon Worcestershire sauce
- 1 tablespoon neutral oil
Instructions
- Make the dry rub. In a small bowl, combine brown sugar, smoked paprika, garlic powder, onion powder, salt, black pepper, cayenne, and cumin. Mix well.
- Season the ribs. Pat the ribs dry with paper towels. Rub with oil, then coat all sides thoroughly with the dry rub. Let the seasoned ribs rest at room temperature for 30 minutes while you prepare the oven.
- Preheat and set up. Preheat oven to 300°F. Line a large rimmed baking sheet with foil, place a wire rack on top, and set the ribs bone-side down on the rack.
- Low and slow cook. Cover the ribs tightly with foil and bake for 2 hours 30 minutes, until the meat has pulled back from the bone ends and is very tender when pierced with a knife.
- Make the glaze. While the ribs cook, stir together the barbecue sauce, apple cider vinegar, and Worcestershire sauce in a small saucepan over low heat. Simmer 5 minutes, then set aside.
- Glaze and finish. Remove the foil from the ribs and brush generously with the glaze. Raise oven temperature to 375°F and bake uncovered for 30 minutes, brushing with another layer of glaze halfway through, until caramelized and deeply colored.
- Rest before serving. Let the ribs rest 10 minutes before cutting. Serve with remaining glaze on the side.
