December preparations, gingerbread smell as decoration, Will's first Christmas approaching, guest room ready with cradle. The week was the life. The life was the cooking. The cooking was the love. And the love was the week, and the week was one of the weeks that stack together to become the years, and the years become the life, and the life is the woman at the stove who cooks and writes and loves and does not stop.
I made she-crab soup on Sunday — the anchor, the constant, the practice. The soup was perfect. The perfection was the practice. And the practice continues, one Sunday at a time, one bowl at a time, one life at a time, the woman stirring, the roux thickening, the kitchen warm, the family fed, the love alive.
The she-crab soup is the anchor, but no Sunday table — especially not one dressed for Will’s first Christmas — stays at just one dish for long. Baked Clams Casino has become the natural companion to these slow, intentional weekends: briny and warm, a little indulgent, the kind of thing you make when the kitchen already smells like love and you simply don’t want to stop. It carries that same coastal spirit as the soup, and setting a tray of these out while the gingerbread fragrance still lingers in the air felt, this week, exactly right.
Baked Clams Casino
Prep Time: 20 min | Cook Time: 12 min | Total Time: 32 min | Servings: 6
Ingredients
- 24 littleneck clams, scrubbed and shucked, bottom shells reserved
- 4 strips bacon, finely diced
- 1/2 cup green bell pepper, finely diced
- 1/4 cup red bell pepper, finely diced
- 1/4 cup shallots, finely minced
- 2 cloves garlic, minced
- 2 tablespoons dry white wine
- 1/2 cup plain breadcrumbs
- 2 tablespoons unsalted butter, melted
- 1 tablespoon fresh flat-leaf parsley, chopped
- 1 teaspoon fresh lemon juice
- 1/4 teaspoon crushed red pepper flakes
- Kosher salt and freshly cracked black pepper, to taste
- Rock salt or crumpled foil, for stabilizing shells on baking sheet
- Lemon wedges, for serving
Instructions
- Preheat oven. Set your oven to 450°F (230°C). Spread a layer of rock salt or crumpled foil across a large rimmed baking sheet to hold the clam shells steady.
- Cook the bacon. In a medium skillet over medium heat, cook the diced bacon until the fat renders and the pieces are just beginning to crisp, about 4–5 minutes. Remove bacon with a slotted spoon and set aside, leaving about 1 tablespoon of drippings in the pan.
- Sauté the vegetables. In the same skillet with the drippings, add the green pepper, red pepper, and shallots. Cook over medium heat, stirring frequently, until softened, about 3 minutes. Add the garlic and red pepper flakes and cook 1 minute more. Add the white wine and stir, scraping up any browned bits, until the liquid is mostly absorbed, about 1 minute. Remove from heat.
- Make the topping. In a bowl, combine the cooked vegetable mixture, reserved bacon, breadcrumbs, melted butter, parsley, and lemon juice. Stir until the breadcrumbs are evenly moistened. Season with salt and black pepper to taste.
- Fill the shells. Nestle the reserved bottom clam shells into the prepared baking sheet. Place one shucked clam in each shell. Spoon a heaping teaspoon of the breadcrumb topping over each clam, pressing gently to adhere.
- Bake. Transfer the baking sheet to the oven and bake until the topping is golden brown and the clams are cooked through and beginning to curl at the edges, about 10–12 minutes.
- Serve immediately. Remove from the oven and arrange on a platter. Serve at once with lemon wedges alongside.
