I turned nineteen this week. October third. I woke up and lay in bed for a while thinking about it the way I always do on birthdays, trying to locate myself. Nineteen. Living alone. Working a job I am good at. Taking a college class. Cooking from scratch in my own kitchen. Six months ago, a year ago, things that felt impossible are now just Tuesday.
Gloria and James had me over for a birthday dinner. She made my favorites: fried chicken, biscuits, collard greens, mac and cheese. A full spread, the whole table, like it was a real holiday. James wore a collared shirt to the dinner table, which he does only on Sundays and special occasions, and when I walked in he said happy birthday girl and hugged me. I do not cry easily but I cried a little at that.
After dinner she brought out banana pudding, which she had made herself despite her arthritis. When I saw the bowl I said you did not have to do that and she said I know I did not have to. That is what doing it means. We ate pudding and James fell asleep in his chair and she and I sat at the kitchen table drinking decaf coffee and talking about nothing important for an hour and a half. That was the birthday gift.
On the drive home I thought about the last birthday I had before the Martin house. I was thirteen, in a group home between placements. Nobody made a cake. I made myself a peanut butter sandwich and sang happy birthday quietly while I ate it alone in the bedroom. Six years between that and this. Six years is not very long. It is not very long at all.
Gloria’s fried chicken is something I will probably never fully replicate — that kind of cooking lives in someone’s hands after decades of practice, and I know that. But since that birthday dinner I have been trying to find my own version of it, something I can make in my own kitchen on a regular Tuesday when I need to feel like the table is set for something that matters. These baked chicken nuggets are not Gloria’s fried chicken, but they are crispy and golden and satisfying in that same deep-down way, and making them myself feels like carrying a little of that night forward with me.
Baked Chicken Nuggets with Honey Mustard
Prep Time: 15 min | Cook Time: 20 min | Total Time: 35 min | Servings: 4
Ingredients
- 1 1/2 lbs boneless, skinless chicken breasts, cut into 1 1/2-inch pieces
- 1 cup panko breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 eggs, beaten
- 2 tablespoons olive oil or cooking spray
- Honey Mustard Dipping Sauce:
- 3 tablespoons Dijon mustard
- 3 tablespoons honey
- 1 tablespoon mayonnaise
- 1 teaspoon apple cider vinegar
Instructions
- Preheat the oven. Heat your oven to 425°F. Line a large baking sheet with parchment paper and lightly coat with cooking spray or a drizzle of olive oil.
- Set up your breading station. Beat the eggs in one shallow bowl. In a second shallow bowl, combine the panko, Parmesan, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir to mix evenly.
- Bread the chicken. Working one piece at a time, dip each chicken piece into the beaten egg, letting the excess drip off, then press firmly into the breadcrumb mixture to coat all sides. Place on the prepared baking sheet in a single layer without crowding.
- Bake until crispy and golden. Bake for 18–22 minutes, flipping once halfway through, until the nuggets are deep golden brown and the internal temperature reaches 165°F. For extra crispiness, switch to broil for the last 2 minutes — watch closely.
- Make the honey mustard. While the chicken bakes, whisk together the Dijon mustard, honey, mayonnaise, and apple cider vinegar in a small bowl until smooth. Taste and adjust — more honey for sweetness, more mustard for bite.
- Serve. Arrange the nuggets on a plate and serve immediately with the honey mustard on the side. These pair well with biscuits, collard greens, or mac and cheese if you want to build out the full spread.
