Baked Balsamic Chicken

Ingredients
- 4 bone-in, skin-on chicken thighs (about 2 lbs total)
- 1/3 cup balsamic vinegar
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon onion powder
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- Fresh parsley, chopped, for garnish
Instructions
- Preheat. Heat your oven to 400°F. Lightly grease a 9x13-inch baking dish or a rimmed sheet pan.
- Make the marinade. In a small bowl, whisk together the balsamic vinegar, olive oil, garlic, honey, Dijon mustard, Italian seasoning, onion powder, salt, and pepper until well combined.
- Coat the chicken. Pat the chicken thighs dry with paper towels and place them skin-side up in the prepared baking dish. Pour the balsamic mixture evenly over and around the chicken, turning each piece to coat both sides. Finish with the skin side up.
- Bake. Roast uncovered for 35 to 40 minutes, basting the chicken with pan juices once halfway through, until the skin is deeply golden and a meat thermometer inserted into the thickest part reads 165°F.
- Rest and glaze. Remove from the oven and let the chicken rest for 5 minutes. Spoon any remaining pan juices over the top as a glaze.
- Serve. Garnish with fresh chopped parsley and serve warm, straight from the pan.
