Asparagus-Stuffed Air-Fryer Chicken Rolls — The Feast That Says Welcome Home

January 2022, and the new year opens with Carrie's return from Kyoto. She arrives at the Charleston airport on January 8th, three and a half months after she left, and I am at the gate (this time I went, this time the airport will not break me, because the arriving is the opposite of the leaving and the opposite can be borne). She walks through the terminal and she is different — not in appearance but in carriage, in the way she moves through space, with the deliberate grace that she learned in Kyoto, the grace of the tea ceremony, the grace of a woman who has been in a place that values slowness and precision and who has absorbed those values the way she absorbs everything: completely.

She smells like Japan. Not a specific smell but a general one — the smell of a country that uses different soap, different fabric softener, different air. The smell will fade in days. The change will not. The change is permanent. Carrie left Charleston as a college student going abroad. She has returned as a woman who has lived in another country and who carries that country inside her the way I carry Mama's recipes: not as a memory but as a part of herself.

She brought gifts: a ceramic teapot for me, a woodworking chisel for Robert (Japanese steel, exquisitely sharp), a silk scarf for Mama, a set of watercolor paints for Joy. Each gift was chosen with the precision that Carrie brings to everything: not the generic gifts of a tourist but the specific gifts of a woman who knows exactly who she is giving to and what they would most want.

Mama received the silk scarf with the tactile pleasure of a woman who can no longer name the gift but who can feel it — the smoothness, the coolness, the particular luxury of silk against skin. I made the welcome-home dinner: fried chicken, collard greens, mac and cheese, cornbread, peach cobbler. The feast of return. The meal that says: you were gone and now you are here and the kitchen celebrates the here-ness the only way it knows how.

The fried chicken I made that January evening was Mama’s recipe, the one I’ve made a hundred times, but what I keep coming back to — the version I want to share here — is the spirit of that meal more than any single dish: something pulled together with care, something that shows the person walking through the door that their arrival was worth preparing for. These asparagus-stuffed air-fryer chicken rolls carry exactly that feeling. They look like you spent the afternoon in the kitchen, they taste like a celebration, and they come together in under forty minutes — which means the cook gets to be at the gate, not stuck at the stove, when someone they love finally comes home.

Asparagus-Stuffed Air-Fryer Chicken Rolls

Ingredients

  • 4 boneless, skinless chicken breasts (about 6 oz each), pounded to 1/4-inch thickness
  • 16 fresh asparagus spears, tough ends trimmed
  • 1/2 cup shredded Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Toothpicks or kitchen twine, for securing

Instructions

  1. Prepare the chicken. Place each pounded chicken breast flat on a clean work surface. Drizzle the inside of each breast lightly with olive oil and season with a pinch of salt and pepper.
  2. Fill and roll. Lay 4 asparagus spears across the center of each chicken breast and sprinkle 2 tablespoons of Parmesan over the asparagus. Roll the chicken tightly around the filling, tucking in the sides as you go, and secure with toothpicks or tie with kitchen twine.
  3. Season the outside. In a small bowl, stir together the garlic powder, smoked paprika, Italian seasoning, remaining salt and pepper, and the rest of the olive oil. Brush or rub this mixture evenly over the outside of each roll.
  4. Preheat the air fryer. Preheat your air fryer to 375°F for 3 minutes. Lightly spray the basket with cooking spray.
  5. Air fry. Arrange the chicken rolls seam-side down in the air fryer basket, leaving space between each one. Cook at 375°F for 18–20 minutes, turning once halfway through, until the exterior is golden and the internal temperature reaches 165°F on an instant-read thermometer.
  6. Rest and serve. Remove the toothpicks or twine. Let the rolls rest for 3 minutes before slicing or serving whole. Finish with a sprinkle of Parmesan and serve immediately.
