Three weeks out and I am in a mode I can only describe as controlled joyful efficiency. Lists are being completed. Things are being checked off. I am a special ed teacher — I live by systems and schedules — and now all of those professional instincts are pointed at the wedding and I feel very alive with purpose.
I had a final dress fitting Wednesday and it still fits and looks exactly right and the alterations are perfect and I stood in the fitting room and thought: June 19th. Two and a half weeks. Patty took a photo from outside the fitting room on her phone and immediately texted it to Babcia Rose and then to Kristin and then to Matt and then to Steve who does not really use his phone but who, she reported, responded with a thumbs up, which from Steve is an ovation.
I made my grandmother pierogi recipe this weekend as a final practice before the wedding batch. Two dozen, potato and cheese filling, properly crimped, boiled and then fried in butter with onion. The crimping technique is the skill that takes the longest to develop and mine is finally at a level I am not embarrassed by. Not Babcia Rose level. Nothing is Babcia Rose level. But good. Genuinely good.
Ryan worked a 24-hour shift Thursday and came home Friday morning with flowers. Not because of any occasion — just because. He said he was passing a flower stand near the firehouse and thought I might like them. I put them in the amber vase on the warm ivory kitchen counter and they were there all week and every time I walked past them I thought about June 19th and then I thought about every Tuesday after June 19th and every Thursday and every ordinary day that is coming and I thought: yes. That is the word. That has always been the word.
After a weekend of crimping and boiling and frying pierogi in butter and onion — hands dusted with flour, testing the filling one more time just to be sure — I wanted something that honored that same spirit of simple, deliberate cooking without sending me back to the kitchen for another two hours. Asparagus pasta is that recipe for me: a handful of good ingredients, a little attention, and something genuinely lovely at the end. It felt exactly right for a late-spring week full of lists being checked off and flowers in the amber vase and everything quietly falling into place.
Asparagus Pasta
Prep Time: 10 min | Cook Time: 20 min | Total Time: 30 min | Servings: 4
Ingredients
- 12 oz linguine or spaghetti
- 1 lb fresh asparagus, woody ends trimmed, cut into 1-inch pieces
- 3 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1/2 cup dry white wine (or vegetable broth)
- 1/2 cup freshly grated Parmesan cheese, plus more for serving
- Zest and juice of 1 lemon
- 1/4 teaspoon crushed red pepper flakes
- Salt and freshly ground black pepper, to taste
- 2 tablespoons reserved pasta cooking water
- Fresh parsley, chopped, for garnish
Instructions
- Cook the pasta. Bring a large pot of generously salted water to a boil. Cook pasta according to package directions until al dente. Before draining, reserve 1/2 cup of pasta cooking water. Drain and set aside.
- Blanch the asparagus. Add the asparagus pieces to the boiling pasta water during the last 2–3 minutes of cooking, or blanch separately until just tender and bright green. Drain alongside the pasta or remove with a slotted spoon.
- Build the sauce. In a large skillet over medium heat, melt the butter. Add the garlic and red pepper flakes and cook, stirring, for about 1 minute until fragrant. Pour in the white wine and let it simmer for 2 minutes, reducing slightly.
- Combine. Add the drained pasta and asparagus to the skillet. Toss to coat, adding reserved pasta water a tablespoon at a time to loosen the sauce as needed.
- Finish and season. Remove from heat. Add the lemon zest, lemon juice, and Parmesan and toss everything together until the cheese melts into a light, glossy sauce. Season generously with salt and black pepper.
- Serve. Divide among bowls and top with additional Parmesan and fresh parsley. Serve immediately.
