Apple Turnovers

Ingredients
- 1 sheet frozen puff pastry, thawed
- 2 medium apples, peeled, cored, and diced (about 2 cups)
- 1/4 cup granulated sugar
- 2 tablespoons brown sugar
- 1 tablespoon all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 1 tablespoon butter
- 1 egg, beaten (for egg wash)
- 1 tablespoon coarse sugar, for topping
Instructions
- Preheat oven. Heat oven to 400°F. Line a baking sheet with parchment paper.
- Cook the filling. In a medium saucepan, melt butter over medium heat. Add diced apples, granulated sugar, brown sugar, flour, cinnamon, nutmeg, and lemon juice. Cook, stirring occasionally, until apples are just tender and the mixture has thickened, about 5–7 minutes. Remove from heat and let cool slightly.
- Cut the pastry. On a lightly floured surface, unfold the puff pastry and roll it out slightly to smooth the seams. Cut into 4 equal squares.
- Fill and fold. Spoon about 2 tablespoons of filling onto one half of each pastry square, leaving a 1/2-inch border. Fold the pastry over the filling to form a triangle. Press edges firmly with a fork to seal.
- Egg wash and top. Place turnovers on the prepared baking sheet. Brush tops with beaten egg and sprinkle with coarse sugar. Cut two small slits in the top of each turnover to vent steam.
- Bake. Bake for 18–20 minutes, until turnovers are puffed and deep golden brown. Transfer to a wire rack and let cool for 5 minutes before serving.
