That Sunday, after the driving and the waiting and the steady exhale of knowing Gayle was stable, I didn’t want anything complicated—I wanted something that went into the oven and came out golden and warm and smelling like home. This Apple-Honey Dutch Baby was exactly right: just a few ingredients, one pan, and enough quiet sweetness to close out a week that had asked a lot of us.
Apple-Honey Dutch Baby

Ingredients
- 3 large eggs
- 3/4 cup whole milk
- 3/4 cup all-purpose flour
- 1 tablespoon honey, plus more for drizzling
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
- 1/4 teaspoon salt
- 3 tablespoons unsalted butter
- 1 medium apple, peeled, cored, and thinly sliced
- 1 tablespoon brown sugar
- Powdered sugar, for serving
Instructions
- Preheat the oven. Place a 10-inch cast iron or oven-safe skillet in the oven and preheat to 425°F. Let the pan heat for at least 10 minutes while you prepare the batter.
- Make the batter. In a blender, combine eggs, milk, flour, honey, vanilla, cinnamon, and salt. Blend on high for about 30 seconds until completely smooth and slightly frothy. Set aside.
- Cook the apples. Carefully remove the hot skillet from the oven. Add butter and swirl to coat the pan as it melts. Add the apple slices and sprinkle with brown sugar. Return the skillet to the oven for 3 minutes, until the apples begin to soften and the butter is bubbling.
- Add the batter. Pull the skillet out again and quickly pour the batter evenly over the apples. Return immediately to the oven.
- Bake until puffed and golden. Bake for 16–18 minutes, until the Dutch baby is dramatically puffed around the edges and deep golden brown in the center. Do not open the oven door during baking.
- Finish and serve. Remove from the oven—it will begin to deflate, which is expected. Drizzle with honey and dust with powdered sugar. Slice into wedges and serve immediately, straight from the skillet.
