- 1 lb breakfast sausage, casings removed and crumbled
- 1 bag (30 oz) frozen shredded hash browns, thawed
- 1 medium yellow onion, diced
- 1 green bell pepper, diced
- 2 cups shredded sharp cheddar cheese, divided
- 8 large eggs
- 1/2 cup whole milk
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 2 tablespoons unsalted butter, for greasing
- Chopped fresh chives or parsley, for garnish (optional)
Instructions
- Brown the sausage. In a skillet over medium heat, cook the crumbled sausage until browned and cooked through, 6–8 minutes. Drain on a paper towel-lined plate and set aside.
- Grease the slow cooker. Generously butter the interior of a 6-quart slow cooker, including the lower sides, to prevent sticking.
- Layer the base. Spread half the hash browns in an even layer across the bottom of the slow cooker. Top with half the sausage, half the onion, half the bell pepper, and 3/4 cup of the shredded cheddar.
- Repeat the layers. Add the remaining hash browns, sausage, onion, and bell pepper. Top with another 3/4 cup of cheddar, reserving 1/2 cup for the finish.
- Whisk the egg mixture. In a medium bowl, whisk together the eggs, milk, garlic powder, smoked paprika, salt, and pepper until fully combined and slightly frothy.
- Pour and press. Slowly pour the egg mixture evenly over the layered ingredients, using a spatula to gently press the top layer down so the egg soaks through.
- Cook overnight. Cover and cook on LOW for 7–8 hours, or until the eggs are fully set in the center and the edges are lightly golden. Avoid lifting the lid during cooking.
- Finish with cheese. Sprinkle the reserved 1/2 cup of cheddar over the top, replace the lid, and let sit for 5 minutes until melted.
