I wanted something golden for that New Year’s morning — something round and whole and full of promise, the way 2023 felt sitting there waiting for us. Aebleskiver were it: little golden spheres, sweet and warm, the kind of thing you make slowly at the stove while the kids are still half-asleep and the coffee is still brewing. They felt like celebration without performance, which was exactly the energy I needed heading into the year of the book.

Ingredients
- 2 cups all-purpose flour
- 1 tablespoon granulated sugar
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 3 large eggs, separated
- 2 cups buttermilk
- 4 tablespoons unsalted butter, melted and cooled
- 1 teaspoon vanilla extract
- Butter or oil for greasing the pan
- Powdered sugar, for serving
- Jam or fruit preserves, for filling (optional)
Instructions
- Mix the dry ingredients. In a large bowl, whisk together flour, sugar, salt, baking powder, and baking soda.
- Combine the wet ingredients. In a separate bowl, whisk the egg yolks with the buttermilk, melted butter, and vanilla extract until smooth.
- Make the batter. Pour the wet mixture into the dry ingredients and stir until just combined — a few small lumps are fine. Do not overmix.
- Beat the egg whites. Using a hand mixer or whisk, beat the egg whites until stiff peaks form. Gently fold the egg whites into the batter in two additions until no white streaks remain.
- Heat the pan. Place an aebleskiver pan over medium heat. Add about 1/2 teaspoon of butter or oil into each well and let it melt.
- Fill the wells. Spoon batter into each well, filling about 3/4 full. If using jam, add about 1/2 teaspoon of jam into the center of each and top with a small spoonful of batter.
- Cook and turn. Cook for 2 to 3 minutes until the bottom is golden brown. Using a skewer or fork, gently turn each aebleskiver 90 degrees, letting the uncooked batter flow down. Continue turning every 1 to 2 minutes until the aebleskiver are evenly golden on all sides and cooked through, about 5 to 6 minutes total per batch.
- Serve. Transfer to a plate and dust generously with powdered sugar. Serve warm with additional jam, fresh fruit, or maple syrup on the side.
